Photographer David Burke has captured images with a camera for over 35 years. Some highlights of his career include capturing the images of Nascar, O.J. Simpson during an NFL game (pre-trial of course), President Ford on the campaign trial and Mrs. Betty Ford at the opening of the Indianapolis Children’s Museum.

Burke has generally enjoyed sports photography the best over the years. His current favorite medium is photography with a twist. He creates photo essays in video compilations. He is able to connect with a viewer by marrying the vibe of visual-techno media with the treasured art of still photography.

Continuing education is a crucial aspect of his life and work. Burke recommends two websites to keep up with ever changing tools in the photography field.  The National Associated Photoshop Professionals and Digital Photo Pro.

Volunteer work has been an important facet of Burke’s shutterbug lifestyle. Burke recently lent his photographic services to a hemophilia/blood disorder overnight camp. (His wife Laurie was the camp nurse for the week.) He photographed the activities of the otherwise “sheltered” children for them to remember their fun outdoor adventures.

The Simplicity Project: Bin-A-Week

One of my goals for The Simplicity Project (TSP) was to reduce the chaos in our only family common area. Today we officially started a Bin-A-Week approach to toy storage in the living room.

3 weeks and 2 days ago Neat Pete and I sorted the living room toys with a fine tooth comb. Some toys went to the garage sale others went to the trash can. We split all the remaining toys among four 36 gallon plastic storage bins. Then we sent ‘em packing to the garage without child permission.

Ryan did not notice.

Okay, did you catch that? Yes, for 3 weeks and 2 days our family was missing 144 gallons of toys with no more than one comment. Two days after the original purge Ry inquired about his pirate ship. To his request I said

The ship is not here right now. Use the couch for ship instead.

Our goal is to create a rotating Bin-A-Week toy schedule to keep the mystery alive for otherwise ignored toys. Each bin contains a variety of battery toys, books, small manipulatives and theme sets like animals, doctor and music.

Today Ryan fell back in love with Duplos. Molly with her purse.

It is like Christmas. TSP is underway!

Menu Plan Monday: An Apple a Day!

Instead of planning whole week of meals I am featuring a whole weeks worth of apple recipes!

Applesauce Honey Rolls

This comes from Apple Lovers’ Cook Book by Shirely Munson, Jo Nelson.

2 loaves (1 lb. each) frozen bread dough
1 cup brown sugar, firmly packed
1/2 cup honey
3 Tablespoons butter or margarine
4 Tablespoons melted butter or margarine
1/2 cup applesauce
2 Tablespoons brown sugar
1/4 cup raisins

Allow dough to thaw in plastic bag. Let rise until doubled in bulk.

Mix the 1 cup brown sugar, honey and 3 Tablespoons butter. Sprinkle mixture over the bottom of a 13x9x2-inch baking pan.

Place dough on lightly floured pastry board or sheet and roll or pat into a 14×12-inch rectangle.

Combine the 4 Tablespoons melted butter, applesauce, 2 Tablespoons brown sugar and raisins; spread evenly over dough. Roll up and seal.

Cut into slices about 1/2 to 1-inch thick. Place slices on honey mixture in pan.

Bake in 350 degree F. oven for 30 minutes or until golden brown. Cool slightly and turn over onto a plate or tray.

Makes 12 rolls.

Seasonal Fall Decor

Welcome to my home.

I love to celebrate the harvest season. I do not really get into the spooky stuff. But I do love the beautiful colors and natural inspirations that are around for fall.

I spurlged this year and bought a metal frame pumpkin from a local arts and crafts store. It was on sale for $5.

I made filling for the cornacopia from ribbon, leaves from outside and faux autumn berries on a stick. I usually keep my autumn handtowel in the emtpy bowl-they were all in the wash pile! The apple corer just happened to be by the bread box it is not a decoration but it could be if I weren't using it everyday! That's what 20 plus pounds of apples will do!

Spending time with good friends over cider and doughnuts in the windy sunshine was superb. We already miss our TX crew. I loved looking at my home state with a fresh pair of eyes. Kristin pointed out to me how green everything looked. I was so busy looking for reds and yellows I forgot how pretty just green can be!

Lately

Once a year I paint my nails in a dark shade. When the summer nights seems far behind me and my mood swings into a darker slower pace I get out the color Garnet. I am far away from goth and from upscale which are the two sub-groups that can pull of a super dark shade of nail polish.

My nails don’t sport the vampy dressings very long but it is a dramatic run while it lasts.

I have a metromint water bottle on display. I hate it. Peter Loves it with a capital L.

The season of preparation is upon us as temperatures dip to hat wearing depths. Good news the sun is still warm and the trees are changing so slowly and beautifully. I have a photo walk in the plans- no photos yet.

We have friends in town that we adore. The Donovans! Now a family of four Matt, Kristin, Jaimes and Gracie are in MN to celebrate a family wedding. We are going to steal them for a day. We are going to the apple orchard tomorrow. I already have visions of homemade apple sauce swirling in my head.

Menu Planning Monday

Monday:
Chicken Enchiladas (recipe below)
Tuesday:
Pork roast, cooked carrots and peas, rolls
Wednesday:
Trucker Stew (recipe below) and Apple Crisp with vanilla ice cream (Wednesday is orchard day)
Thursday:
Salmon Cakes and green beans
Friday:
Make your pizza night (pre-done crust), pepperoni, basil, tomato, cheese
Saturday:
Leftover buffet or grilled cheese if leftovers are icky
Sunday:
Blueberry pancakes (Krustez box mix)  and sausages

Chicken Enchiladas

  • 1 1/4 lb. ground chicken
  • 1 onion, chopped
  • 1 cup frozen corn
  • 1 cup sour cream
  • 2 cups grated Cheddar or Monterey Jack cheese
  • 6-8″ tortillas or 10-12 depending on size you can find
  • 2 cans/jars mild enchilada sauce (use medium or hot for spicier enchiladas)

Cooking Day: In skillet with small amount of cooking oil over medium heat, cook ground chicken and onion until chicken is cooked through. Drain grease (if any). Transfer to bowl and add sour cream, corn and 1/4 cup of the enchilada sauce.

Using a 9×13 baking dish lightly sprayed with non-stick cooking spray, coat bottom with 1/3 cup of mild enchilada sauce. In each tortilla, spoon 2 tbsp of chicken mixture and 1 tbsp of cheese and roll tortilla up, then placing in baking dish seam-side down so they don’t unroll. Once done, pour leftover enchilada sauce over top, making sure it is spread well. Sprinkle remaining cheese on top. Allow to cool (if not already) then wrap and freeze.

On Baking Day: Remove chicken enchiladas and defrost. Cover with tin foil, then bake for 20-30 minutes (or until fully cooked) in a preheated 350F oven. Remove foil and return to oven until cheese on top is melted.

Trucker Stew

  • 1 lb. pork sausage, cooked and drained
  • 1 lb. ground beef, cooked and drained
  • 31 oz. can pork and beans
  • 16 oz. light kidney beans (can)
  • 16 oz. dark kidney beans (can)
  • 14 oz. can lima beans, drained
  • 14 oz. can waxed beans, drained
  • 1 cup brown sugar
  • 1 cup ketchup
  • 1 small package Taco Seasoning
  • 1 small package  dry ranch dip seasoning
  • 1 tbsp. spicy mustard

Cooking Day: Combine all ingredients and place in a freezer container. Freeze.

Serving Day: Thaw.  Place all ingredients in a slow cooker – cover – simmer on high 2-3 hours.

One of the perks of being an singleton: Storage Space.

In my family I was able to keep my must-haves year after year under one condition…I had to sort, purge and label toys, books, clothes and memory junk upon H.S. and College graduation and marriage.

My Sticker Book has made all the cuts.

Oh yes, I coveted, traded and obsessed over stickers. My favorite collections were by far the “puffies”. All you who were little in the 80′s are like,

“Yea, remember the fuzzy ones or the holograms? They were totally mint!”

My second favorite collection of stickers was and is the “smellys” – Stratch-n-Sniff. My “smellys” still smell. Ryan has poured over my smelly collection with caution to skip the western boot sticker. He frequents the chocolate cones and root beer mugs.

Mom, they smell like what they are!

He got me thinking about what I look like vs. what I smell like. Well at least my Godly aroma.
